Herbes de Provence

Provence is located in southeastern France, bordered by the Mediterranean Sea to its south. It's climate is similar to California, which makes growing these "Provençal" herbs here easy.

Herbes de Provence is an aromatic mixture of dried herbs, which traditionally can include thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and/or bay leaf.

This home-grown batch of Herbes de Provence is my special blend-grown, dried and packaged in California. It is stronger on the rosemary side and also includes dried thyme, a little bit of basil, some marjoram, oregano, and a bit of dried summer savory.

Apply this tasty aromatic blend to roasted or barbecued meats such as chicken, pork, lamb, and fish simply by coating with olive oil and sprinkling with Herbs de Provence.

Whether grilled, seared, roasted or in stews, these Herbes de Provence change the fundamental taste of dishes. They season roasted vegetables, tofu and other side dishes as well.

Herbes de Provence can also be incorporated into liquids by whisking them into soups, stews, sauces, and salad dressings for extra Provençal flavor.

Also, try sprinkling one or two pinches of Herbes de Provence to the actual coals of your grill when they are hot, to infuse the smoke with flavor.

When kept in an airtight container the Herbes de Provence will last between six months to a year, depending on the freshness of the Herbes. Store in a cool, dry place away from light and heat.
